A magnificent Southern Italian red wine displaying a beautiful translucent ruby color with light violet glints. Fermented using ancient, non-temperature-controlled foot-treading techniques inside a traditional volcanic-rock palmento, the complex nose opens with an incredibly expressive and rustic bouquet of wild strawberries, sour red cherries, and dried pomegranates. This lively profile is beautifully layered with distinct suggestions of wet ash, crushed basalt, dried Mediterranean herbs, and a faint hint of classic leather. On the palate, it balances a crunchy, energetic, medium-bodied red fruit core and a vibrant, linear mountain acidity with firm, grippy volcanic tannins that resolve into a long, beautifully savory, and mineral-driven finish.
Food Pairing: Pairs flawlessly with roasted pork belly, slow-stewed lamb shoulder, smoked venison, and hearty pasta dishes topped with savory tapenade or mushroom ragù.
