Picked at sunrise, when temperatures are at their coolest. Fruit was whole berry pressed (berries were sorted and gently pressed with our new encapsulated press. Juice was very clean and settled quickly. Cool fermentation with organic yeast to complement the organically grown vineyard site. Fermented to an end result where residual sugar and alcohol content were taken into account to compliment the lovely acidity of the block.
Tasting Notes
This Riesling is pale yellow in colour with flavours of citrus (lemon, line, subtle pink grapefruit) green apple, and mineral tones. It is unbelievably crisp which helps to balance out the sweetness that is felt at the front of the palate.
