While our Rideau represents the quintessential taste of Canada, we have finished this expression with an international influence. The marriage of Spanish Sherry with Canadian whisky permeates every layer, from colour to palate, uniting the richness of both regions into one singular experience.
A rich and decadent dram, this Oloroso sherry cask finish whisky opens with deep aromas of dried figs, raisins, dark cherry, and warm baking spice. Layers of toffee, roasted nuts, and dark chocolate develop on the palate, balanced by subtle oak and a velvety mouthfeel. Notes of cinnamon, clove, and espresso linger through a long, warming finish with hints of leather and sweet fruitcake.
