Winemaking Careful fermentation management is key to this wine’s floral lift and tropical depth. Winemakers selected specific yeast strains to amplify aromatic esters and thiols, unlocking elderflower, passionfruit, and stone fruit notes. Fermentation at controlled temperatures preserved these delicate aromas, while gentle lees stirring added a soft, creamy texture. The result is a Sauvignon Blanc that balances vibrant acidity with a rounded, expressive palate.
Vintage The 2024 vintage in Paso Robles unfolded under a canopy of warmth and sun, encouraging early budbreak and uniform flowering across Sauvignon Blanc blocks. A notably dry spring reduced disease pressure, allowing fruit to mature evenly through summer’s long, golden days. Harvest began ahead of schedule, with clusters showing concentrated ripeness thanks to the region’s signature diurnal swings. In response to the season’s intensity, winemaking choices were tailored to preserve the vintage’s expressive aromatics through cool fermentations and gentle lees integration.
Pairing Logic This expressive Sauvignon Blanc complements delicate fish dishes, vibrant salads, and mild curries with its ripe nectarine and pineapple core. Herbal dressings, citrus zest, or floral infusions such as chamomile will echo the wine’s aromatic lift and refreshing finish. The creamy texture pairs especially well with soft cheeses or lightly fried fare, delivering a refreshing brightness with every bite.
