Processing & fermentation - Washed process. Only the ripest cherries are hand-selected for quality. After pulping, the beans undergo a short 10–14 hour dry fermentation before being gently washed to remove mucilage. Finally, they are naturally dried on raised beds for 12–15 days, resulting in a clean, vibrant cup with nuanced flavours.
Impact - Don Abel mentors other regional producers, fostering sustainable practices and elevating Honduran specialty coffee globally.
Brew Guide - 19.5g//95.4C//45g//19s (Based on commercial equipment. Domestic grinders will require a longer extraction time i.e. the coffee will pour a little longer up to 30secs)
