Tasting notes: Candied orange, floral, bergamot, chocolate, spice
Eli Espinoza produces this washed Geisha at Las Pirias in Chirinos, Peru. His four hectares of plots sit between 1,800 and 2,000 metres, with the Geisha occupying only a small area.
After harvest, the cherries ferment in shaded plastic bags for 24 hours. They are then floated, depulped and held in tanks for 24-36 hours before drying on beds for 10-14 days. The espresso roast emphasizes orange, chocolate and a silky texture.
