Gonzalez Byass Matusalem VORS 30 Year Old Oloroso Sherry Dulce
The rare old soleras range from Gonzalez Byass use only the finest sun-ripened grapes. Expert blending and then maturing in oak casks for a minimum of 30 years. The rare old solera sherries are a true expression of some of the world’s finest and rarest wines.
Produced in very small quantities. Matusalem is made by enrichment of a dry oloroso sherry with 25% pedro ximenez. As well as the additional ageing in its own solera.
- Matusalem after 30 years in cask has acquired an intense mahogany colour
- Profound aromas of dried fruits, raisins, spices and mature wood, as well as leather and cocoa
- On the palate smooth and sweet, long and velvety
- Matusalem has an interesting bitter sweet finish due to its mix of the sweet pedro ximenez and bitter tannins from the oak
Partner Gonzalez Byass Matusalem VORS 30 year old with a fruit dessert such as tarte tatin, or with a selection of mature cheeses.
