This aged agave spirit breaks traditional boundaries. Artisans at Casa San Matías rest this tequila inside barrels that previously held Weller’s famed wheated bourbon. It merges Mexican heritage with Kentucky provenance. These highly coveted C.Y.P.B. casks impart a distinctively soft, butterscotch-laden profile that fundamentally transforms the underlying Añejo spirit throughout the lengthy maturation process. You'll discover a wildly authentic cross-cultural collaboration.
The core foundation remains remarkably focused. Jimadors carefully harvest mature Blue Weber agave directly from the mineral-rich soils of the elevated Los Altos region. They slowly roast these piñas in traditional masonry ovens, extracting deeply concentrated sugars before undergoing double distillation in stainless steel pots. The entire process demands uncompromising patience. Matured at NOM 1103, the liquid pulls heavy vanilla and toasted oak characteristics from the seasoned staves while it doesn't lose core vegetal brightness.
- Aged in ex-Weller "Craft Your Perfect Bourbon" wheated whiskey barrels
- Produced from 100% Blue Weber agave at Casa San Matías
- Blends authentic Los Altos terroir with distinct Kentucky bourbon influence
