Tasting notes: Apple, Raisin, Plum, Toffee, Oolong Tea
Stefano Um established Fazenda Um in 2002, building a detail-focused farm around the belief that Brazilian coffee can express exceptional depth and nuance. The operation is now led by his sons Boram and Garam, who connect cultivation, roasting, service, and education through Um Coffee Co. Their work has earned international recognition, including Boram’s 2023 World Barista Championship and Garam’s third place at the 2023 World Brewers Cup.
This lot is Red Catucaí 785 grown from 1,200 to 1,400 metres in the mountains of Espírito Santo. In the pulped-natural process, ripe cherries are depulped and dried with a controlled layer of mucilage, combining washed-coffee clarity with the body and sweetness of a natural. Apple, raisin, plum, toffee, and oolong tea create a balanced filter cup with fruit, caramel, and delicate tea-like structure.
