Tasting notes: Pineapple, Mango, Blackberry, Peach, Dried Fig
This Benti Nenka lot brings together coffee from roughly 450 to 500 smallholder families in Hambela, Guji. The farmers cultivate coffee alongside food crops on small plots, then deliver their best ripe cherries to EDN Ethiopian Coffee’s nearby processing site. EDN, founded in 2018, works with these communities while investing in processing infrastructure, team training, and long-term producer relationships.
After flotation and careful visual sorting, the selected cherries ferment for 10 to 12 days in sealed, oxygen-free tanks with temperature, pressure, and sugar levels closely monitored. They are then dried on ventilated beds for about 15 to 20 days. The natural anaerobic process intensifies the lot’s candy-like tropical sweetness, expressed here as pineapple, mango, blackberry, peach, and dried fig.
