Tasting notes: Roasted Pecan, Dark Chocolate, Butterscotch
Bon Matin is Zab’s darker-roasted take on Joyeux Roger, with caramelization pushed further to create a toastier, more intense profile. The natural-process Brazilian blend combines Yellow Catucaí, Mundo Novo, Red Catuaí, and Topázio grown from 900 to 1,200 metres in Campo das Vertentes. Toasted pecan, dark chocolate, and butterscotch give it a creamy texture, controlled bitterness, and moderate acidity that pair especially well with milk.
The coffee comes from Sancoffee, an independent B Corp-certified cooperative uniting 20 member farms and supporting roughly 600 smallholder producers. Its Beyond Borders program provides technical support, education, and youth training, while the cooperative’s environmental work includes native-tree planting, biodiversity restoration, and farm-level carbon research. Sancoffee achieved carbon neutrality in 2020, extending a regional coffee tradition that dates to 1860.
