Distilled at Woodinville Whiskey Co. in Woodinville, Washington, this flagship craft release is crafted using 100% locally grown Washington State grains from the Octorara Rose Ranch in Quincy. Pot-distilled and aged in heavily charred, custom toasted Independent Stave Company oak barrels that are seasoned open-air for 18 months, it delivers a rich, grain-forward profile laden with dark caramel, toasted oak, vanilla, and sweet spice.
Food Pairing: Smoked brisket, glazed pork belly, aged Cheddar, pecan pie, or dark chocolate.
Tasting Notes: Rich amber with warm coppery highlights and smooth, medium-to-heavy viscosity along the glass.
Nose: Warm and inviting, opening with toasted oak, dark caramel, and crème brûlée, followed by sweet corn, vanilla bean, and gentle baking spices.
Palate: Full-bodied and velvety, featuring sweet caramel, dark chocolate, and toasted rye upfront before developing into warming cinnamon, nutmeg, and polished oak tannins.
Finish: Long, warm, and lingering with notes of sweet wood spice, vanilla, and toasted grain.
Serve: Enjoy neat at room temperature in a Glencairn glass, or with a large ice sphere.
