Brew bold, well-attenuated ales with White Labs WLP007 Crisp English Ale Yeast | PurePitch® Next Generation, a premium liquid yeast known for its clean fermentation profile, high attenuation, and crisp, dry finish. Originally developed from a classic English strain, WLP007 has become a favorite among both homebrewers and professional breweries for producing hop-forward beers and high-gravity ales with excellent balance. Each 70 mL PurePitch® Next Generation pouch contains approximately 150 billion cells, providing enough healthy yeast to ferment a standard 5-gallon batch without requiring a starter for most moderate-gravity beers. WLP007 is ideal for brewing American IPA, Double IPA, Barleywine, Imperial Stout, English IPA, Pale Ale, Porter, Brown Ale, and other strong or hop-forward styles.
WLP007 is prized for its ability to ferment thoroughly while leaving very little residual sweetness, allowing hop aroma, bitterness, and malt character to remain clean and well defined. Its medium to high flocculation promotes excellent clarification, producing bright beer with a firm, structured finish. The strain performs especially well in higher-gravity recipes, where its dependable attenuation helps create balanced beers without becoming overly sweet.
This liquid ale yeast features medium to high flocculation, 70–80% attenuation, STA1 negative status, and an alcohol tolerance of 5–10% ABV. It performs best between 65–70°F (18–21°C) and is packaged in White Labs' PurePitch® Next Generation pouch containing approximately 150 billion cells for consistent pitching rates and reliable fermentation performance.
For best results, store refrigerated between 33–38°F and do not freeze. Pitch cold into well-oxygenated wort and ferment within the recommended temperature range. One pouch is suitable for most standard-strength 5-gallon batches, while a yeast starter is recommended for higher-gravity beers, older yeast, or recipes requiring elevated pitching rates. Proper oxygenation and healthy fermentation practices will help maximize attenuation, clarity, and overall beer quality.
