Brew juicy, hazy IPAs with White Labs WLP066 London Fog Ale Yeast | PurePitch® Next Generation, a premium liquid yeast developed to create the soft mouthfeel, tropical fruit character, and balanced hop expression that define modern New England–style IPAs. Each 70 mL PurePitch® Next Generation pouch contains approximately 150 billion cells, providing enough healthy yeast to ferment a standard 5-gallon batch without requiring a starter for most moderate-gravity beers. WLP066 is ideal for brewing Hazy/Juicy IPA, American IPA, Double IPA, English IPA, Pale Ale, Blonde Ale, Brown Ale, Porter, Stout, Imperial Stout, Old Ale, Barleywine, Red Ale, and Scotch Ale.
WLP066 produces expressive aromas of pineapple and ruby red grapefruit while leaving a touch of residual sweetness that enhances hop flavor and creates the smooth, velvety mouthfeel expected in hazy IPAs. Its restrained flocculation helps maintain the signature haze of the style while allowing hop-forward recipes to showcase bright tropical and citrus characteristics without overwhelming bitterness.
This liquid ale yeast features low to medium flocculation, 75–82% attenuation, STA1 negative status, and an alcohol tolerance of 5–10% ABV. It performs best between 64–72°F (17–21°C) and is packaged in White Labs' PurePitch® Next Generation pouch containing approximately 150 billion cells for reliable pitching rates and consistent fermentation performance.
For best results, store refrigerated between 33–38°F and do not freeze. Pitch into well-oxygenated wort and ferment within the recommended temperature range. One pouch is suitable for most standard-strength 5-gallon batches, while a yeast starter is recommended for higher-gravity beers or older yeast. Proper oxygenation and fermentation management will help maximize hop expression, mouthfeel, and overall beer quality.
