Introduction
Undone No. 6 'This is Not Mezcal' Mexican Smoky Agave is a non alcoholic spirit alternative produced in Hamburg, Germany. The brand was founded to provide the bar community with high quality alternatives that maintain the true essence of traditional spirits. The company utilizes a multi stage process to remove the alcohol from real fermented products before blending the remaining essence with natural flavours to mirror the profile of an alcoholic original.
Spirit Description
This non alcoholic agave spirit presents a clear appearance with a complex sensory profile. The nose features exciting floral agave scents alongside notes of cooked pumpkin and a gentle, present smokiness. On the palate, it delivers the signature taste of classic Mexican smoky agave with layers of pear and earthy undertones. The body is refined and light, leading to a smooth finish characterized by a lingering agave flavour and subtle smoke. This product contains less than 0.3% alcohol by volume.
Food Pairing
The smoky and floral structure of this spirit makes it a natural partner for bold and vibrant cuisines. It pairs exceptionally well with traditional Mexican dishes such as tacos, enchiladas, and fresh guacamole. For a more substantial pairing, it complements grilled meats and spicy foods, where the smokiness of the agave mirrors the charred flavours of the grill. It also serves as a refreshing accompaniment to citrus based seafood dishes like ceviche or grilled shrimp.
Distinctive Features
Undone No. 6 is distinguished by its 'terroir driven' base, which is refined from real mezcal rather than being a simple botanical water. It is a health conscious choice, being vegan, gluten free, and low in calories, with only 1.8 calories and 0.3 g of sugar per 30 ml serving. The product is crafted using natural ingredients including agave thickening juice, tequila flavour, and natural smoke flavour. This spirit is designed to maintain its aromatic intensity even when mixed, providing the necessary 'bite' for professional cocktail applications.
Serving Suggestions
To enjoy the classic smoky agave profile at its best, this spirit is primarily intended as a core ingredient for alcohol free cocktails. For a 'Virgin Paloma', mix 50 ml of Undone No. 6 with 100 ml of grapefruit juice and soda water in a glass filled with ice. It is also ideal for a 'Not Smoky Margarita' by shaking 50 ml of the spirit with 25 ml of lime juice and 15 ml of agave syrup. For a simple long drink, it can be served with ginger beer as an 'Agave Mule' or mixed with fresh pink grapefruit juice. It is recommended to store the bottle in a cool place protected from sunlight and consume it within eight weeks of opening.
