Sunset in Undertow 2021 is a Syrah produced by Stagiaire Wine, a natural wine project founded by Brent Mayeaux. The fruit comes from The Poor Ranch in the mountains east of Hopland, Mendocino County, where the Poor family farms only red varieties suited to a hot, arid, dry-farmed environment. The vines are grafted onto St George rootstock and farmed organically with cross-discing for weed management and sulfur dusting for powdery mildew control. In 2021, a drought year, the fruit was destemmed, macerated for two weeks, and aged in barrel for two years.
