Tasting notes: Strawberry, Chocolate, Cinnamon
Red Velvet Cake comes from September Coffee, produced by Edwin Noreña — a fourth-generation farmer, Q-Grader, and Cup of Excellence judge at Finca Campo Hermoso in Circasia, Quindío, Colombia. Known for pioneering co-fermentation techniques inspired by craft brewing, Edwin inoculates his fermentation tanks with a specific yeast culture, dehydrated fruits, and organic powdered cinnamon before the cherries undergo carbonic maceration for 48 hours. The coffee is then sun-dried in greenhouses for 10 days, yielding a bold, dessert-like Caturra that is silky, wildly sweet, and long in finish — bursting with strawberry, chocolate, and warm cinnamon.
