SafAle W-68 German Wheat Beer Dry Yeast is a top-fermenting brewing yeast developed specifically for authentic German-style wheat beers. It produces the classic balance of banana esters and clove phenolics associated with traditional Hefeweizen while delivering reliable fermentation, a smooth mouthfeel, and the naturally hazy appearance expected in wheat beer styles.
Designed for homebrewers and professional brewers alike, SafAle W-68 performs well in Hefeweizen, Dunkelweizen, Weizenbock, and other German wheat beer styles. Its expressive ester profile complements wheat-heavy grain bills while maintaining dependable fermentation performance throughout the brewing process.
This dry brewing yeast features medium flocculation, 78–84% attenuation, positive POF expression, high ester production, and performs within a fermentation temperature range of 64.4–78.8°F (18–26°C). Each 11.5g packet is suitable for fermenting approximately 5–8 gallons of beer.
For best results, pitch according to the manufacturer's recommendations and maintain fermentation temperatures within the recommended range to achieve your preferred balance of banana and clove character. Proper wort aeration and healthy fermentation practices support consistent performance.
Widely used for brewing traditional German wheat beers, SafAle W-68 provides dependable fermentation and classic yeast-driven flavor development for brewers seeking authentic Bavarian-style results.
