This distinctive aromatized wine, classified as a Vermouth, hails from Piedmont, Italy. The name 'Bonmè' is significant, as it refers to wormwood (Artemisia absinthium) in the Piedmontese dialect, a key botanical in traditional vermouth recipes. Poderi Colla is a family-owned winery with a rich history in Piedmontese viticulture dating back to the 1894, with the family's winemaking roots going back to 1703. The estate's philosophy is centred on the naturalness and originality of their wines, combining centuries-old traditions with a deep respect for the land, which is carried into the production of their Vermouth.
Poderi Colla's Bonme is a white Vermouth crafted from 100% Muscat grape must. Historically, this style was called Moscato all'Assenzio. The vermouth is sweet because the fermentation of the Muscat must is prevented by immediately adding pure Buongusto alcohol. This process preserves the grape's natural sugar and its extraordinary aromatic charge.
The flavour is built by infusing approximately twelve herbs and botanicals—including peels, seeds, roots, and flowers—separately in alcohol for one to two weeks. These extracts are meticulously blended to achieve the right balance.
-
Colour: Lemon to golden yellow.
-
Aroma: Highly aromatic, with a nose featuring floral, citrus, and herbaceous nuances.
-
Palate: It offers vibrant citrus flavours—including lemon, pineapple, and orange—complemented by a complex herbal profile and an almondy roundness.
-
Stylistic Notes: The blend is allowed to rest for several months to allow the flavours to integrate seamlessly before bottling. This vermouth is noted for its complexity and excellent balance.
The Bonme Vermouth is versatile and can be served as an aperitif or a digestif. It should be served chilled, ideally at $7-8\degree \text{C}$ ($45-48\degree \text{F}$) as an aperitif to enhance its refreshing qualities.
