PM Spirits Still Strength Blanco is a masterfully crafted high-proof tequila that proves exceptional quality doesn't require compromise—distilled from 100% estate-grown Blue Weber agave and bottled at an unapologetic 110 proof (55% ABV) with zero additives, not even water. This is the product of a single horno batch from NOM 1468 (Grupo Tequilero Mexico) under the direction of Master Distiller Juan Antonio Gonzalez, sourced and bottled by Jose Luis Gutierrez, whose extensive background with the Mexican Trade Commission and direct sourcing in Jalisco ensures uncompromising provenance. Every detail is transparent—distillation date, horno number, bottling date—and certified additive-free by Tequila Matchmaker, making this a testament to PM Spirits' philosophy of transparency and purity over all else.
The nose opens with striking aromas of cooked agave, limestone, brine, and lemon zest, evolving to reveal cinnamon spice, earth, minerals, and hints of cut grass and menthol. The palate delivers a thick, buttery mouthfeel packed with concentrated sweet agave flavor balanced by pepper, herbs, and subtle citrus notes, while the finish remains long and clean with lingering warmth and spice. High-proof drinks don't always drink easy, but this still strength expression defies expectations—the alcohol integrates seamlessly, allowing the pure agave character to shine without overwhelming heat, creating a beautifully balanced sipping experience that rivals the standard proof bottling.
Perfect served neat in a rocks glass or over a single large ice cube to appreciate its full aromatic complexity and layered agave expression. This is tequila for serious enthusiasts—those who understand that high proof can mean high quality when executed with this level of care and transparency. Limited and never to be repeated, each batch represents a singular moment in time from a specific oven, making this a collector's expression that honors the art and science of traditional tequila production.
