A structured and elegant mountain Cabernet Sauvignon with aromas of blackberry, cassis, cedar, graphite, and violet. Concentrated layers of dark cherry, cocoa, tobacco, and baking spice unfold across a refined palate balanced by firm tannins, vibrant acidity, and a remarkably long sophisticated finish with impressive depth.
Food Pairing: Pairs beautifully with grilled ribeye, braised short ribs, roasted lamb, aged cheeses, mushroom dishes, and truffle-infused pasta plates.
Robert Parker's Wine Advocate
The medium to full-bodied 2021 Cabernet Sauvignon Tanbark Hill Vineyard delivers complex notes of mountain fruit, with hints of sage and bay leaf accenting cassis, blueberries and raspberries. In the mouth, it's firmly buttressed by grainy tannins, with terrific acids that linger on the finish in mouthwatering fashion. This, Togni's "early-drinking" wine, should age two decades with ease.
Wine Spectator
This offers a typical Spring Mountain bouquet of red currant and red cherry notes laced liberally with potpourri, cast iron and bramble hints, while savory and menthol accents in the background add a fresh edge. Not shy on grip through the finish.
