Born from the fire of the pit and the soul of Tennessee barbecue, Peg Leg Porker Full Proof Straight Bourbon (119.7 proof) is unapologetically bold. Pitmaster Carey Bringle’s approach to whiskey mirrors his barbecue craft—patience, smoke, and Southern honesty. This cask-strength expression blends 4- to 6-year-old barrels of Tennessee bourbon, then undergoes Peg Leg’s proprietary hickory charcoal filtration rather than the traditional maple, creating a deeper, savory smokiness that stands apart. The nose erupts with toasted oak, burnt sugar, and hickory smoke. The palate rolls thick with caramel corn, charred vanilla bean, candied pecans, and peppered spice. A surge of warmth arrives mid-sip, then eases into buttery toffee and dry oak. The finish? Endless—smoke, honey, and spice swirl in harmony like the last bite of perfect brisket. This is Tennessee in a glass: soulful, smoky, and made to sip slow.
