Michoacán holds breathtaking, untamed secrets of agave. Don Miguel Perez Reséndiz fearlessly harvests massive, notoriously stubborn Alto plants from the idyllic, densely forested lakefront community of Oponguio in beautiful Michoacán. He actively leaves these wild agaves to mature as capón for two years before roasting them. The family expertly mills the cooked piñas using an ingeniously repurposed vintage Datsun car engine. We completely adore this chaotic ingenuity.
This rare, uncertified liquid undergoes exactly two rustic runs through a traditional Filipino-style still carefully constructed from bright copper and solid oak timber. It genuinely defies standard commercial expectations. They brilliantly rest the final distillate inside glass vessels for over four years. This crucial resting period heavily softens the formidable alcohol heat while deeply enhancing those profoundly rich, earthy vegetal characteristics. You pour this remarkable masterpiece when you actively desire an unmasked connection to authentic rural craftsmanship.
