Tasting notes: Tart apple, pecan, fig and allspice
Fredy Perez produces this coffee near Caona in San Andrés, Lempira, Honduras. He grew up farming coffee with his father, purchased his own parcel in 2008 and now farms with his wife, Glenis. Onyx began working in the area around 2021, with Fredy helping connect the roaster to neighbouring producers.
The Pacas, Catuai and Typica lot is washed and patio dried. Onyx roasts it ultra-light for both filter and espresso. Fredy’s coffee placed 14th nationally in the 2023 Honduras Cup of Excellence.
