The historic Dominique chicken emblem of Domenico Canale's 1866 venture proudly defines this legacy. Old Dominick "Don't Fear The Rooster" is unquestionably a Memphis masterpiece. Decades after the brand's inception, master distillers revived the label with unapologetic Tennessee grit, producing a single barrel selection that bridges the gap between pre-Prohibition ambition and modern craftsmanship. It's breaking free from the mundane. Pouring a glass reveals an unfiltered, robust intensity that perfectly honors its namesake with every single drop.
Crafting an exceptional Tennessee whiskey demands both patience and a profound reverence for the Lincoln County Process. They've filtered the spirit lightly. A deliberate pass through a modest bed of sugar maple charcoal softens the sharp edges while masterfully retaining the robust, spicy grain character of the distillate. The mashbill creates a stunning baseline. It spends eight long years resting in deeply charred American white oak barrels, where the expanding wood imparts an astounding array of velvety smooth textures and bold, caramelized complexities.
Diving into this single barrel expression reveals an intricate tapestry of relentless flavor. Aromas dance from the glass. The heavy, syrupy mouthfeel effortlessly carries waves of chocolate caramel cheesecake and seasoned oak, showcasing a decadence that rewards those who appreciate an uncompromising pour. It delivers authentic, unbridled richness. The finish fades slowly into a majestic, lingering embrace of toasted spice and deep black cherry notes.
