Introduction
Matsui Sakura Cask Single Malt originates from the Tottori Prefecture in Japan, produced at the Kurayoshi Distillery. Founded in 1910, Matsui Shuzo has a legacy of over a century in spirits production and utilizes the pristine, mineral-rich groundwater from Mount Daisen to proof its whiskies. This expression is part of the Matsui Single Malt collection, which emphasizes the influence of different wood types on the spirit.
Description
This single malt is aged in casks made from Sakura wood, also known as Japanese cherry wood, which is rare and difficult to work with. It presents a light amber hue and a delicate aromatic profile featuring floral scents of cherry blossoms, vanilla, and a hint of malted barley. On the palate, the whisky is crisp and elegant, offering flavours of almond, orange peel, and light honey with a subtle spice. The finish is clean and lingering, showcasing the unique floral sweetness imparted by the Sakura wood. It is bottled at 48% alcohol content without chill filtration or artificial colouring.
Food Pairing
The floral and delicate nature of the Sakura Cask makes it an excellent companion for lighter savoury dishes and desserts. It pairs beautifully with fresh seafood such as snapper sashimi or grilled prawns, which complement its crisp fruitiness. The whisky also pairs well with Japanese sweets like mochi or fruit tarts, as the cherry wood notes enhance floral and fruity flavours. For a more savoury contrast, consider serving it with lightly salted nuts or a mild goat cheese.
