Winemaking This 2021 Cabernet Sauvignon from the Pays d’Oc IGP, France likely saw a restrained fermentation aimed at highlighting earthy subtleties over primary fruit. Winemakers age the wine in oak to enhance its natural tannin structure, coaxing out tones of caramel, toast, and a quiet forest floor character beneath its savory frame. With low sweetness and acidity, every step of the process favored a more grounded expression, tailored for those who prefer a wine that reveals itself slowly in good company.
Vintage The 2021 vintage in Pays d'Oc was marked by a cool, steady spring and a dry summer, offering Cabernet Sauvignon the slow, even ripening it thrives on. Limited rainfall and mild temperatures throughout the growing season helped preserve structure and balance, key for this varietal’s expression in the region. Harvested in early October, the fruit showed restraint and nuance, a reflection of the year’s measured pace. This vintage captures the quiet complexity that only a temperate, low-stress growing season like 2021 can deliver.
Pairing Logic This smooth and satisfying Cabernet Sauvignon offers notes of cherry, caramel, and forest floor, making it a versatile partner for food. Its plush texture and subtle dryness pair beautifully with grilled red meats, roasted root vegetables, or mushroom-based dishes. Accentuate the wine’s earthy depth by incorporating balsamic reductions or herb-forward marinades.
