France’s Provence region is renowned for producing some of the world’s most elegant rosé wines, and Lafon & Chamboissier is a stellar representation of that legacy. The winery is a collaboration between Dominique Lafon—famed for his work in Burgundy—and François Chamboissier of Bordeaux, who have joined forces to create terroir-driven wines from select southern French vineyards. Their approach emphasizes minimal intervention and precision, honouring the character of each grape and vineyard site.
Wine Description
This Provence rosé pours a delicate, pale salmon pink, shimmering in the glass. The nose is vibrant with notes of fresh wild strawberries, red currants, and white peach, lifted by a floral whisper of rose petals and citrus zest. On the palate, it is dry, crisp, and elegantly textured, showing flavours of stone fruit, grapefruit, and a hint of herbaceous garrigue. The wine is light to medium in body with bright acidity and a clean, mineral-laced finish.
Food Pairing
Perfect alongside Niçoise salad, grilled Mediterranean vegetables, or herb-marinated chicken. Its crispness also complements seafood dishes like shrimp ceviche or seared tuna. This pairing highlights the wine’s depth and character.
