Korbel Extra Dry California Champagne is an off-dry California sparkling wine in a single 750ml bottle at 12% ABV / 24 proof. Korbel blends Chenin Blanc, Chardonnay, French Colombard, and Pinot Noir: Chenin Blanc contributes soft fruit, Chardonnay adds structure and citrus, French Colombard brings bright fruit, and Pinot Noir supplies roundness and depth. The wine is fermented in stainless steel, then produced through the traditional méthode champenoise bottle-fermentation process. Its 1.5% dosage is part of the wine’s off-dry style.
The winery describes Extra Dry as light and luscious, with bright citrus, vanilla, and spice. Blending across multiple varieties, vintages, and California appellations is intended to maintain a consistent house style, while fermentation in the bottle builds the sparkling texture. Korbel recommends Extra Dry with double- or triple-cream cheeses, dried fruit, pâté, and spicy Asian dishes. Served well chilled, it delivers the producer’s fresh, gently off-dry profile while retaining the four-grape framework and classic bottle-fermented method.
