Kaiyo Five Wood Japanese Mizunara Oak Whisky (750mL) is a blended malt whisky bottled un-chill filtered at 44% ABV (88 proof). Its package identifies five wood influences, bringing together Pedro Ximénez sherry, Oloroso sherry, ex-bourbon, French oak, and Japanese Mizunara oak casks.
Kaiyo also sends the whisky on a sea voyage of up to three months, where motion, changing temperatures, weather, and air pressure contribute to maturation. Exact-product tasting notes describe citrus, pear, melon, honey, vanilla, caramel, and warm spice, with the aromatic character of Mizunara oak carrying through the finish.
Enjoy it neat to compare the layered cask influences, add a few drops of water to open the aroma, or serve it over a large cube. Its citrus, fruit, and spice profile also suits a carefully made highball. This is a single 750mL bottle; store it upright, tightly closed, and away from heat and direct light.
