Justin Cabernet Sauvignon comes from Paso Robles, on California's Central Coast. Justin Baldwin founded the winery in 1981. The first all-Cabernet release followed in 1988.
The grapes are hand-picked and fermented in steel tanks. The 2022 wine aged 14 months in small oak barrels, a quarter of them new American oak.
The nose shows red raspberry and black cherry, with vanilla, soft herbs and warm spice. In your mouth it is dry and nearly full-bodied, with velvety tannins. Red plum and ripe cherry lead, joined by caramel, toasted coconut, fennel and sage. The finish is long and savory, with a floral lift and a little pepper.
The winery suggests filet mignon, grilled chicken or burgers. It also works with lamb or aged cheddar.
