Jikuya White Honkaku Sweet Potato Shochu 750ml is a Japanese sweet potato spirit from Jikuya Distillery in Kagoshima Prefecture. Made with sweet potatoes and rice, this honkaku shochu reflects the region through ingredients harvested in Kagoshima. The bottle brings together a traditional fermentation method, single distillation and extended clay-pot resting, with the importer describing a balance of sweetness and spice.
Fermentation begins in decades-old clay pots buried up to their shoulders in the distillery floor. Anno imo sweet potatoes enter the secondary fermentation, contributing sweet and spicy notes. The fermented ingredients then make a single pass through a pot still. Clay-pot fermentation and pot-still distillation carry the sweet-potato character through this carefully made Japanese spirit.
After distillation, the spirit rests for at least three years in unglazed clay pots, a step the importer credits with added depth of flavor. Jikuya White is bottled at 25% ABV, offering a sweet-potato shochu shaped by its ingredients and patient resting. This selection contains one 750ml bottle from Japan.
