GEOMETRY
This blend unites two Onyx favorites: a washed Ethiopia for bright florals and crisp acidity, and a washed Colombia for balance and sweetness.
The result is a beautifully structured but bright cup with clarity, complexity, and a silky tactile. Perfect as a filter-style brew or an espresso-inspired concentrate, Geometry dissolves instantly into hot water or milk, delivering a refined, dynamic coffee experience anytime, anywhere.
This is available in a pack of six pre-portioned bags of soluble coffee, which will readily dissolve into hot water or your preferred milk product.
Roast Level: Expressive Light
Nordic-style roasting is a moniker applied to the very light roasting style that many employ in Northern Europe, which Onyx calls “Expressive Light”. If a coffee falls within this category, you can expect a bright acidity that dominates the cup, as well as a silky but tea-like tactile and a sweetness that is light and short.
BLEND APPROACH
The approach to creating blends is a bit different at Onyx. Instead of choosing coffees from specific countries or regions that will, in theory, intertwine well to develop complex & cohesive flavors like most, they start from the end and work their way back.
This perspective means they choose to create a particular flavor profile first. Once a flavor profile has been set- in this case, blueberry, lemon, and tea for Geometry- then they start cupping blind through a large number of coffees to find those specific attributes.
With this blend, the Colombian gives us a syrupy, clean, fermented fruit flavor. It shows itself upfront and in the finish. Next, they add a washed Ethiopian to introduce more fruit and complexity.
The purpose is that once a flavor profile is created, they can update the coffees that make up Geometry every 2-3 months. This allows a year-round blend with a flavor profile of high quality while retaining Onyx's commitment to seasonal coffees. This vigorous amount of cupping and blending takes a considerable amount of time, it makes the difference and is a system they use for all our blends.
