Mooleh Manay Estate is a 75-acre farm in Nakoor Village, Coorg, Karnataka, managed by Komal and Akshay Dashrath. They take a data-driven approach to coffee farming and processing, and work with many coffee species such as Robusta, Excelsa and Arabica.
This Robusta lot undergoes a 120-hour extended carbonic maceration fermentation in sealed drums, using a custom culture and Saccharomyces cerevisiae yeast. After fermentation, the whole cherries are slowly dried on raised beds inside a polyhouse for around 10 days, then rested for two months before hulling.
The result of this one is a soft and clean Robusta with notes of dark chocolate, dried fig, and molasses.
