High West Bourye Limited Whiskey is a premium hybrid blend combining straight bourbon and straight rye whiskies, each aged for a minimum of 10 years. Named after the fictional "jackalope" due to its unusual fusion of distinct spirit categories, this release delivers a harmonious profile that bridges the rich, sweet caramel depth of bourbon with the bold, earthy spice of aged rye.
Food Pairing: Charcuterie boards featuring aged cheddar or smoked gouda, grilled duck breast with a cherry reduction, prime ribeye steak, or dark chocolate pecan tarts.
Tasting Notes : Rich, full-bodied, and oily with complex warmth that balances sweet oak complexity with invigorating baking spices.
Nose : Honeycrisp apples, caramelized peaches, dried apricot, dark chocolate truffles, toasted almonds, vanilla, and subtle tobacco leaf.
Palate : Maple syrup, red cherries, brown sugar, birch root, and nougat, balanced by spicy rye, peppered sweet corn, cinnamon, and zingy orange zest.
Finish : Long and lingering with notes of pecan brittle, candied ginger, seasoned oak, and white pepper spice.
Serve : Neat or with a few drops of limestone water in a Glencairn glass.
