Tasting notes: Lychee, Peach, Osmanthus Honey
El Paraiso Lychee is a Castillo from Finca El Paraíso in Piendamó, Cauca, produced by Daniel Bermúdez. The farm combines high-altitude cultivation with microbiology, controlled fermentation and purpose-built drying facilities. Hatch’s current listing gives an elevation of 1,960 metres and a profile of lychee, peach and osmanthus honey.
Finca El Paraíso’s approach combines cultivation with microbiology and tightly controlled processing. For the current release, Hatch describes a 72-hour submerged anaerobic stage, followed by a second stage using a cultured fermentation medium. A thermal-shock wash and controlled dehumidifier drying complete the process.
