Greywacke Wild Sauvignon Blanc is a distinctive wine produced by Greywacke, a well-known winery in Marlborough, New Zealand. This particular Sauvignon Blanc variation is known for its unique winemaking approach that sets it apart from traditional styles. Greywacke Wild Sauvignon Blanc is a departure from the more common Marlborough Sauvignon Blanc style. This wine is crafted using wild fermentation, where the fermentation process is initiated by naturally occurring wild yeast strains present on the grape skins and in the winery environment. This can lead to a more complex and nuanced flavor profile. As a result of the wild fermentation, Greywacke Wild Sauvignon Blanc may exhibit a broader range of aromas and flavors compared to the traditional style. While you'll still find the signature vibrant citrus and tropical fruit notes, there might be additional layers of complexity, including nutty, earthy, and savory elements. Like other Greywacke wines, the grapes for Wild Sauvignon Blanc are sourced from vineyards in Marlborough. The region's terroir contributes to the wine's expression of fruit and character. Greywacke Wild Sauvignon Blanc's unique character makes it an interesting match for a variety of dishes. It pairs well with seafood, grilled vegetables, salads, and even dishes with some spice or umami elements.
