MunJebel Rosso CS is produced by Frank Cornelissen on the northern valley of Mount Etna in eastern Sicily, in the comune of Castiglione di Sicilia. It is made from 100% Nerello Mascalese sourced from the ungrafted vineyard in contrada Zottorinoto, section Chiusa Spagnolo, planted around 1925 at 620 metres elevation. The fruit is destemmed and lightly crushed, then fermented on the skins with indigenous yeasts for about 50 days. The wine ages in neutral fiberglass tanks for about 18 months followed by a further 18 months in bottle.
