Hailing from Italy’s picturesque Emilia-Romagna region, Fattoria Amo is a small, artisanal winery committed to natural farming and minimal-intervention winemaking. Founded on a philosophy of ecological harmony and expression of terroir, the estate focuses on crafting wines that are vibrant, pure, and full of personality. 'Rebel' represents the estate’s playful, nonconformist approach to the traditional styles of sparkling wine.
Wine Description
The 2022 'Rebel' Pet Nat is a naturally sparkling wine that exudes a cloudy, golden hue with a lively, unfiltered effervescence. On the nose, it bursts with aromas of yellow apple, pear skin, lemon zest, and subtle floral undertones. The palate is zippy and energetic, offering flavours of orchard fruit, tangy citrus, and a faint touch of lees-derived brioche. Light to medium-bodied, with a crisp acidity and a dry, refreshing finish, it shows excellent balance and raw charm.
Food Pairing
Ideal alongside light fare such as fried calamari, goat cheese salads, or fresh focaccia with olives. The wine’s vibrancy and slight funk complement salty and tangy dishes, cutting through richness with ease. Together, they create an unforgettable dining experience.
