What does Grade 4 mean for Ethiopian green coffee?
Ethiopia grades green coffee on a scale of 1 to 9. Grade 4 allows a higher defect count than Grade 1 or 2 lots and is priced accordingly. For home roasters and commercial buyers building bold espresso blends, Grade 4 Ethiopian naturals offer genuine origin character at a more accessible price point than premium grade lots. The blueberry and wine character native to Sidama naturals comes through clearly at this grade level when roasted with care.
What makes natural process coffee different from washed?
In natural processing the whole coffee cherry is dried on raised beds before the fruit skin is removed. The fruit sugars ferment slowly into the bean during drying, producing heavier body, lower acidity, and pronounced fruit and wine-like character in the cup. Washed processing removes the cherry skin first, producing a cleaner, brighter cup where the origin terroir comes through more precisely. Natural process coffees from Ethiopia like this Sidama are prized for their bold, distinctive fruit character that is impossible to replicate through washed processing.
How should I store natural process green coffee?
Store in a cool, dry place away from direct light and moisture. Green coffee is stable for 12 to 18 months when stored correctly. Natural process greens can be slightly more sensitive to humidity than washed lots due to residual fruit sugars in the bean structure. We ship all our green coffee in 9 layer hermetic Ecotact bags to preserve moisture content and the aromatic character of this lot between roasting sessions.
