Domaine de l'Enclos Chablis is a white wine made entirely from Chardonnay grapes sourced from the Premier Cru La Fourchaume vineyard in Chablis, Burgundy. The wine is fermented and aged in stainless steel tanks to preserve its freshness and purity of fruit.
On the nose, the wine exhibits aromas of mandarin essential oils, yellow-orange fruit flesh, yellow apple, and white currants. Subtle notes of pine nuts and basil are also present. On the palate, the wine is full-bodied with lively acidity and a creamy texture, showcasing the power and agility of the wine. The flavors of citrus, particularly mandarin, are dominant, while the Kimmeridge limestone soil of the vineyard adds complexity to the wine.
Overall, this Chablis is a well-balanced and elegant wine with a long and gentle finish. It is an excellent pairing for seafood, particularly oysters and shellfish, as well as chicken and creamy sauces.
