Dolin Rouge brings classic French elegance to the world of sweet vermouth—refined, herbaceous, and perfect for enhancing both cocktails and casual sipping.
📜 Heritage & Production
-
Hailing from Chambéry, Savoy, Dolin is the last remaining traditional vermouth producer in the region, with a legacy dating back to 1821 and France’s only AOC for vermouth (1932)
-
Crafted using over 30–50 alpine botanicals, including coriander, hyssop, rhubarb, gentian, thyme, and citrus peel, all macerated in Savoy white wine—no industrial extracts or artificial flavors
👃 Aromas & Flavor Profile
-
Displays a lustrous copper-salmon hue, followed by a fragrant nose of fruit compote, prunes, walnuts, and fresh herbs, accented with Sichuan pepper, cinnamon, gingerbread, tobacco, oregano, and hyssop
-
On the palate, it’s light, fresh, and lightly sweet, balanced by spicy-herbal tones, nutty sherry notes, and a clean, pleasantly dry finish .
🍸 Mixability & Pairing
-
Acclaimed as a top-tier sweet vermouth for cocktails, striking a fine line between botanical complexity and softness without overshadowing spirits like bourbon or gin—perfect for Manhattans, Negronis, or sipped over ice with citrus .
-
Great alongside charcuterie, cured meats, nutty cheeses, or even tomato-driven dishes and cooked meats
✅ Why It Stands Out
-
Notably lighter, drier, and more elegant than many Italian counterparts .
-
Maintains its appellation-controlled authenticity, emphasizing real alpine herbs and traditional craftsmanship over sweetness
-
Featured in The Spruce Eats’ list of best sweet vermouths of 2025 for its balanced floral, honey, and sherry flavors—ideal for cocktails without masking them
