Cynar “Ricetta Originale” is a distinctive Italian amaro that balances bittersweet herbal depth with surprising warmth and complexity. With its artichoke-leaf base and a signature blend of 13 botanicals, it works equally well stirred down, topped with soda, or as an inventive cocktail ingredient.
Origins & Craftsmanship
Created in Italy in 1952 by Venetian entrepreneur Angelo Dalle Molle, Cynar takes its name from Cynara scolymus (the artichoke) and features artichoke-leaf extract alongside a secret recipe of herbs, roots and botanicals. The Ricetta Originale version is bottled in a 1 L format, typically at 16.5 % ABV (though variants exist) and crafted with care to preserve the bitter-sweet, vegetal-herbal character.
Its versatility has made it a favourite in bars and homes alike: served as an aperitif over ice with soda and an orange slice, or swapped into classic cocktails in place of more familiar bitters.
Critics Reviews
Reviewers have praised Cynar for its elegance and surprisingly refined bitterness. One detailed tasting noted: “This relatively gentle amaro… the palate finds mellow dark chocolate, walnut and allspice, finishing bittersweet.” Others commend its complex herbal structure and versatility in both aperitif and cocktail settings.
Tasting Profile
-
Nose: Warm vegetal greenness—artichoke leaves and fresh herbs—followed by dark-chocolate fudge, walnut skin, and subtle caramelised sugar.
-
Palate: A rich interplay of bittersweet flavours: artichoke and green herb under-notes, dark cocoa, toasted nuts, gentle allspice and a smooth sugar edge. Balanced bitterness emerges without becoming unpleasant.
-
Finish: Long, warming, and lingering—herbal bitterness remains prominent alongside hints of licorice root, roasted nut and dry citrus peel. The after-taste is memorable and clean.
