The Craigellachie 27 Year Old Exceptional Cask Series Sauternes Finish is a rare, limited-edition Speyside single malt that masterfully balances the distillery's signature muscular character with refined sweetness. Distilled on April 13, 1993, it was initially matured for roughly 25 years in refill and re-charred ex-Bourbon casks before being finished for nearly two years in French Sauternes wine casks. The nose is opulent and tropical, offering hoards of syrupy tinned pineapple, ripe peaches, and apricots, layered with creamy vanilla and a honeyed richness. On the palate, it reveals a luscious and supple mouthfeel with notes of fruitcake, apricot jam, and custard, while the Sauternes influence adds a delicate citrus glaze. The finish is long and supple, lingering with honey, light oak spice, and a gentle echo of dried orchard fruits.
Food Pairing: Perfectly complements dark chocolate torte, apple tart, roasted nuts (almonds and hazelnuts), braised venison, or aged Gouda cheese.
Tasting Notes : Deep golden amber in appearance, offering a heavy, viscous, and mouth-coating texture on the palate.
Nose : Sweet candied pineapple, honeyed apricot, and ripe melon balanced by subtle sulfur, toasted oak, vanilla, and light floral accents.
Palate : Rich and full-bodied with flavors of poached pear, heather honey, candied citrus peel, toasted almonds, and gentle oak spices.
Finish : Long, complex, and warming, lingering with sweet tropical fruit, subtle wax, oak tannin, and soft baking spice.
Serve : Best enjoyed neat in a Glencairn glass at room temperature, or with a few drops of pure water to open up the complex fruity and floral aromas.
