The Prophets & Nomads Guava Gose is a standout seasonal and mainstay in the "art-meets-beer" portfolio of Ontario’s Collective Arts Brewing. This beer is a modern, tropical riff on the traditional Gose, a historical German style known for its tartness and hint of salinity. By infusing the base with massive amounts of fresh guava, Collective Arts has created a pink, tropical powerhouse that is widely considered one of the most refreshing fruited sours in Canada.
Beer Description
This Gose pours a beautiful, hazy straw-to-soft-pink color with a fizzy, fleeting white head.
Aroma: It features an immediate, heady punch of tropical fruit. The scent of fresh, ripe pink guava is unmistakable, accompanied by a bright lactic tartness and a subtle, floral coriander spice.
Palate: On the tongue, it is light-bodied, tart, and incredibly effervescent. It leads with a sharp, puckering acidity that is quickly softened by the lush, sweet flavor of guava. True to the style, a tiny pinch of Himalayan salt on the finish rounds out the tartness and makes the fruit flavors pop, leaving the palate clean and refreshed.
Profile: ABV of 4.9% and negligible bitterness (around 12 IBU), as the beer’s structure relies on acidity and salt rather than hops.
Technical Notes: Brewed as a kettle sour using a lactic acid fermentation to achieve its bright tang. It is conditioned on significant amounts of guava purée and finished with crushed coriander and sea salt. This combination creates a "rehydration" effect that makes it a perfect pairing for hot summer days.
