Currently owned by Philippe Austruy, the winery is managed with a philosophy of cultivating the 'art of wine', focusing on precision and an elegant expression of the diverse clay and limestone terroirs of the Massif des Maures foothills.

Chateau Peyrassol Cuvee des Commandeurs Rose displays a soft, pale pink colour reminiscent of rose petals or lychees. The nose is expressive and charming, offering a perfumed mix of blood orange, peach, and jasmine, alongside wild berries like gooseberry and raspberry. On the palate, the wine is silky and crisp, delivering a lively mix of citrus, white currant, and orchard fruit flavours supported by a spine of juicy acidity. It is characterized by its refreshing tension, a delicate mineral touch, and a subtle saline finish. The varietal composition typically includes approximately 40% Grenache, 30% Cinsault, and 15% Syrah, with small amounts of Vermentino (Rolle) and Mourvedre. The ABV is approximately 12.5% to 13%, and the vineyard is certified organic by Ecocert. The optimal drinking window is from release through the next two years to preserve its freshness.
