Produced in the heart of Italy's Tuscany region, specifically within the Gaiole in Chianti area of Chianti Classico, Castello di Ama Haiku 2021 is a masterfully crafted Super Tuscan. The estate, founded in the 1970s and currently managed by Lorenza Sebasti and winemaker Marco Pallanti, is renowned for its commitment to site-specific winemaking and the early adoption of the 'cru' concept in the region.
Wine Description
This bottle reveals an intense reddish purple hue with ruby nuances. The aromatic profile is deep and refined, featuring a 'constellation' of cassis, dark berries, and fruits of the forest, layered with notes of cigar wrapper, wild herbs, and a hint of espresso. On the palate, the wine is full bodied and nascently complex, showcasing a vibrant core of pomegranate and black cherry fruit framed by clean mineral notes and polished, yet firm, tannins.

Food Pairing
The wine's balanced acidity and structured tannins make it an excellent companion for hearty dishes such as braised short rib ragu, roasted lamb with rosemary, or beef wellington. It also pairs beautifully with earthy mushroom-based pastas or aged cheeses like Pecorino Toscano.
