Cantera Negra Silver is an unaged tequila made in Jalisco. Its 100% blue Weber agave grows in volcanic soil. The agave is harvested fully mature, then slow-roasted in small batches. Only three ingredients go into it: agave, water and yeast.
It is crystal clear, so nothing hides the agave. The brand calls it a highly earthy tequila. That is the first thing you notice when you raise the glass. Cooked agave leads, with a clean mineral edge.
Take a sip and the cooked agave comes forward. It is a touch sweeter than many blancos, with bright citrus. Then a spicy, peppery warmth spreads across your tongue and cheeks. It still goes down smooth. The finish leaves natural hints of citrus and clean, earthy notes.
You can sip it neat if you enjoy a bold blanco. It is just as good in a cocktail. The brand likes it in Ranch Water, an Old Fashioned and even an Espresso Martini. Margaritas and Palomas are easy wins too.
Serve it with tacos, ceviche or grilled seafood. The citrus and pepper pick up on lime and spice in the food. If you love tequila with real agave character, keep this one close at hand.
