Bushmills Causeway 1997 Rum Cask Irish Whiskey
Matured patiently for over two decades, this rare Irish single malt whiskey is a testament to time, tradition, and craftsmanship. Distilled at the historic Bushmills Distillery and laid down on 14th February 1997, it has spent 25 uninterrupted years in first-fill American oak rum casks.
An extraordinary choice that infuses the spirit with remarkable tropical richness. Released as part of the prestigious 2022 Causeway Collection, this limited-edition expression is bottled at cask strength and non chill-filtered, preserving its full intensity and natural character.
- The nose opens with a burst of tropical fruit. Ripe mango, apricot, and pineapple, all brightened by a touch of citrus zest.
- The mid-palate deepens with silky honey, vanilla toffee, and the smooth richness of aged oak. Subtle layers of warming spice and dried coconut emerge, balancing the sweetness beautifully.
- The finish is long, complex, and gently spiced, leaving behind a final note of tropical warmth.
Pair with caramelised pork belly, jerk chicken, or glazed duck. Enjoy pineapple tarte tatin, coconut panna cotta, or rum cake.
