Benromach distillery
Benromach was founded in 1898 near Forres in Speyside. It closed in 1983, was bought by the independent bottler Gordon & MacPhail in 1993 and reopened in 1998. A small team makes the spirit by hand, and most releases use lightly peated barley to recreate the gently smoky Speyside style of the past.
The whisky
The 21 Year Old spends over two decades in first-fill sherry and bourbon casks, with the sherry-seasoned oak coming from Jerez and the wood itself from America and Spain. Benromach describe a more nuanced sherry influence than the younger ages, with subtle spice, Seville orange and a charred oak finish from the bourbon barrels.
How to enjoy it
Serve it neat in a tulip glass and let it rest for a few minutes before tasting. Add water only a drop at a time, if at all. It is best kept for slow sipping after dinner.
